Hummus on pita bread
Method
Soak 50g chickpeas overnight. Boil till soft, cool, then blend with 5g garlic, 20g tahini paste and 10ml olive oil. Garnish with a little Sumac powder, and a drizzle of olive oil. Spread on pita bread or wholewheat toast.

Method

Veg Crudités with Cocktail Sauce
Method
To make crudités, cut 4 asparagus, 20g peppers (red, yellow, green), 20g cucumber and 20g carrot into match-stick sizes. For the sauce, mix 25g mayonnaise with 10g ketchup and 3ml Tabasco sauce. Add 3ml Worcestershire sauce and season according to taste.

Cheese and Fruits Skewer
Method
Cut 20g grapes, 30g apples, 20g kiwi and 20g pineapple, 2 cubes of low-fat Cheddar and 2 cubes of Emmental cheese into small equal cubes. Slide in the cheese and the fruits into the skewers alternately.

Fruit Salad with Honey Dip
Method
Cut assorted fruits of choice into small cubes and place them together. For the dip, mix together 20g honey and 5ml lemon juice. Pour this over the fruits and add a little rock salt to balance the sweetness of the dip.
